Great local cooking experience
As no one else signed up for the class the evening that we took it, we had a private cooking experience with Chef Miguel! He taught us about the importance of chocolate to Mexican culture and to mole traditions while we sipped chocolate beverages and Mexican wine before we jumped into making salsas, mole, and delicious enmoladas. Would recommend to anyone who's interested in food, culture, and cooking.

Isabella was wonderful! She picked us up at our Air BnB, drove us to her home which is about 30 minutes outside of SMA. It was lovely to see some of the countryside. We made a wonderful meal together - appetizer, soup, two salsas, main entree + margarita's! - and we learned about the origins of Mexican staples -- beans, corn, squash and tomatoes. Most interesting was learning how to prepare nopales which me made into a lovely soup! Isabella was organized and so easy to work with. Her kitchen felt like home!

What a perfect day! We were picked up directly from our Airbnb and taken to the organic farm. We had a great tour before sitting down to a wonderful lunch. I am vegan so I wasn’t sure what to expect. The chef created an incredible meal from start to finish!

A Masterclass in Mexican Cuisine
I've taken cooking classes in Italy, the USA, Guatemala, and Mexico, and I've come away with many delicious recipes. Chef David's recipes are outstanding too. However, today was the first class where I left with more than recipes. I truly felt I gained new cooking skills and learned new techniques, along with a deeper understanding of the cuisine and its ingredients. It was awesome! Highly recommend.

Hands-on Mexican Cooking Experience
The duo of Sergio and Maria are a great pair to lead this class. It began with them picking me up at my hotel and driving us to the big mercado to shop for groceries for our feast. While at the mercado we also enjoyed a coffee/tea and had some delicious barbacoa tacos. The cooking took place in their home kitchen. We made a nice range of dishes including quesadillas, Querétaro style enchiladas, tortilla soup, 2 styles of agua chili with fresh seafood and a rice pudding dessert. Along the way, many delicious beverages were consumed as well, prepared by Maria. At the beginning of the class they made a nice presentation about the food we would be preparing and what parts of Mexico the different dishes came from. Conversation throughout the class was easy, interesting and delightful. I would highly recommend this class to anyone who would like to get some hands-on experience with Mexican cuisine.

The cooking class my husband and I took in San Miguel was easily a standout of our trip. While the food was fantastic, what we really appreciated was the deep dive into the history of every dish. It wasn’t just a "how-to"; our instructor shared the stories behind the ingredients and how the local cuisine evolved, which gave us a much deeper connection to what we were making. Beyond the big-picture history, he peppered the session with great little technical tips—small things about heat management and knife work that you don't usually find in a standard recipe book. We can’t wait to start using them back in our own kitchen. It felt less like a formal lecture and more like hanging out with an expert who genuinely loves the craft. If you're in San Miguel and want to understand the culture through the food, this is the way to do it.

We went to San Miguel de Allende (SMdA) for a weeklong cooking school with Cook In Mexico. We spent the week at the beautiful Casa Novem (27 Hospicio) located a couple of blocks from the main square in the historical district. We went to the market frequently and shopped in the historical center. Lots of old historical sites in the main city center as SMdA is considered the heart of not just Mexico but also the Mexican Independence. Founded in 1542, SMdA is a UNESCO World Heritage site and should be on everyone’s bucket list. The culinary scene is amazing - do not miss the street food stands throughout the center, and try out the mescal & tequila tastings.

A New Taste of Mexico
I have been to numerous cooking classes around the world and I would rate this right at the top level. Anna is a gracious teacher and clearly loves what she does. We prepared two main courses and an amazing salsa. Everything was delicious and is something I will prepare again. I am a cookbook author and create recipes for an Italian based wine club, and I learned a lot today. Anna gave us the history of the dishes and brought them alive. We did the actually preparation, which was very fun.
