What To Expect
We are a family winery, where already the 6 generation is taking place. We are in organic conversion, with 25ha of vineyards and 7ha of olives trees. Beside the wine cellar we also have an oil mill where we produce organic extra virgin olive oil. From the wine cellar tower you can enyoj the spectacular views on the Slovenian Istria.
Santomas is all about the history, ancestors and symbolism. Connecting one story from the vineyard to the bottle with strong philosophy that is present since 1997 that is now becoming a connection between modern and traditional.
We work with the local varieties refosco and malvasia, and also international ones, like cabernet sauvignon, syrah and merlot. In the wine cellar we go with history of premium quality and modern technologies like lowing the sulphur, vegan, spontaneous fermentations etc.
